THE WELL's Herb Dijon Vinaigrette

Packed with nutrient-dense fresh greens, this lively vinaigrette is the house dressing at NYC's popular wellness cafe, THE WELL. The combination of fresh spinach, parsley, and chives delivers big on fiber and heart-healthy anti-inflammatories and folate. It's even a good source of vitamin C. But more importantly, it's incredibly delicious. Use it to dress your salads, of course, but try it, too, with grilled chicken or shrimp.

Makes about 1 cup 

Ingredients:

  • ⅓ cup fresh flat-leaf parsley leaves and tender stems
  • 1 small bunch chives, coarsely chopped 
  • 2 cups packed fresh spinach leaves, trimmed and torn
  • 1 teaspoon fresh lemon Juice
  • 1 teaspoon Dijon mustard
  • ½ teaspoon cold water
  • 1 teaspoon kosher salt
  • ⅓ cup olive oil

    Combine all the ingredients except the olive oil in a blender and blend until well combined. With the blender running on low speed, pour in the olive oil and blend until smooth and emulsified. Refrigerate for up to 3 days.
